THE LEVEL OF FOOD SAFETY KNOWLEDGE OF GASTRONOMY AND CULINARY ARTS STUDENTS IN TURKEY

Abstract:
This study aims to measure the level of food safety knowledge of the Gastronomy and Culinary Arts students that will be working as chefs or manager in the food and beverage businesses. A total of 113 students at Abant Izzet Baysal University were participated in this question survey study. The overall knowledge score was determined as 72.88% and signi?cantly associated with both the education level and taking course about food safety (p<0.05). No statistical signi?cant difference among gender, different age groups and following the latest developments was found (p>0.05). The biggest knowledge gaps that have been identi?ed in relation to time/temperature control and cooling. However, compared with many studies that are related to food safety Knowledge level, students appeared to be much better than food handlers. The importance of this issue in all gastronomy and culinary arts departments should be increased making necessary adjustments to give an effective food safety cours
